5 Healthy Breakfasts

Good morning! What are you having for breakfast today? Are you one of those people who can get by till lunch on just a cup of coffee? Or do you wake in the morning with your tummy rumbling? I’m definitely the latter – I never skip breakfast – if I did, I would certainly regret it and so would everyone else!

I used to have a bowl of cereal every morning, until it was brought to my attention just how much sugar boxed breakfast cereals contain. Don’t get me wrong, I’m not a killjoy – I still occasionally let my kids choose honey rings or chocolate rice (although to be honest their favourites are Weetabix and bran flakes, if you can believe that!) But I do like to mix it up a bit and get some healthier options in there, too. Here are five of my favourites to give you inspiration this week.

Egg and avocado on toast

I know this sounds a bit weird but, trust me, it tastes great. Toast your bread, mash up an avocado with a fork and boil your egg just how you like it (runny yolk for me!) Pile it up and tuck in!



DIY strawberry yoghurt

So much better than those sickly store-bought ones. Chop up a handful of strawberries and mix them with some Greek yoghurt. If you have time, whizz up a few extra strawberries in the blender to make a strawberry sauce topping.



Cinnamon stewed apple

My kids love this, despite its appearance! Peel, core and chop some apples into chunks. Boil in a pan with a few tablespoons of water for about 10 minutes, until the apple pieces are soft. Add a handful of raisins and sultanas and a pinch of cinnamon. Serve warm of cold. I also added a dollop of Greek yoghurt and a sprinkling of cinnamon to these – breakfast is the most important meal of the day!



DIY muesli

Simple and delicious – just a bowl of fine oats mixed with dried fruit and nuts of your choice. This one has raisins, sultanas, goji berries and dried strawberries in it. Ordinary cow’s milk will do, but I think rice milk makes it taste even better!



Fruit dippers (for the kids)

Kids love anything DIY. Give them each a ramekin of Greek yoghurt and a variety of fruit, cut into pieces, and let the dipping commence!
